A very easy healthy version of a classing pepperoni pasta

Pepperoni zoodles

Vegan pepperoni in a tomato base to dress up these photogenic noodles.

Ingredients

2 small zucchinis, spiralized

1 chub Plantcraft pepperoni, cubed

1 cup pasta sauce

2 tsp oil

cherry tomatoes to garnish

 

 

Instructions

  1. Crisp up the pepperoni cubes in a small amount of very hot oil, then remove pepperoni from pan
  2. Add in the spiralized zucchini and toss it around to warm it up, for 1-2 minutes. Keep it al dente, don’t cook it.
  3. Top it with your favourite pasta sauce, add the pepperoni and a few cherry tomatoes.
